The following contains spoilers for The Legend of Zelda: Ocarina of Time!
Background: Sometime during the seven years that Link's soul slept in the Sacred Realm, Princess Zelda approached her Sheikah guardian Impa and asked to disguise herself as one of Ganondorf's minions to avoid capture. Impa agrees to her proposal and puts Zelda's consciousness to sleep, creating the disguise known as Sheik. For a time after, Impa taught Sheik the ways of the Sheikah tribe, the histories of Hyrule, as well as the melodies and songs necessary for Link to succeed in saving Hyrule. During this time, Sheik developed his own personality, separate from that of Zelda's.
Until Link reawakened as the Hero of Time, Sheik was told he was to serve Ganondorf, telling him that he was a descendant of the Sheikah that betrayed the royal family and was banished from Hyrule, to avoid suspicion. With this, Impa sends Sheik away to begin his task of protecting Princess Zelda at the breast of the enemy. Ganondorf, though wary, accepts Sheik's services, believing Sheik is seeking revenge on the Royal Family that had betrayed the Sheikah tribe in the past. Ganondorf assigns him the task of finding Princess Zelda before she and the Hero of Time meet.
After Link awakens, Sheik continues to serve Ganondorf, but he guides Link on his journey to awaken the Sages as well. He tells Ganondorf of Link's progress but he also leaks information to Link about Ganondorf's activities. By this time, Sheik has earned Ganondorf's trust and is allowed to come and go as he pleases. He eventually betrays Ganondorf in favour of assisting Link. Through all of this, he is completely aware of the fact that he is, in actuality, Princess Zelda. Sheik continues guiding Link, even after betraying Ganondorf, up until Link completes his journey at which point, Sheik releases the spell, freeing Zelda while he himself simply disappears.
General Skills/Abilities: Sheik is a decent fighter, though he prefers not doing so, instead performing tricks and illusions. He is able to see through illusions as an innate Sheikah ability. He is able to perform basic elemental spells and I assume his trademark vanishing technique is a minor teleportation spell. He specializes in hand-to-hand combat and thrown weapons (daggers, needles and the like). He's fast and relies mostly on instinct if forced into a combat situation. Stealth is another of his specialties and he has excellent musical talent.
General Weaknesses: Not overly strong, he's relatively easy to overpower with brute strength. Any foreign substances in his body (drugs, alcohol, poisons and the like) will cause him to become extremely ill, as his body has likely never dealt with any of these. Any tampering with the spell that holds him in existence will cause physical problems, as well as psychological problems, especially if something should happen to Zelda's consciousness. Most of his magical abilities had been almost completely disabled on his arrival in Luceti, compromising his fighting style.
Personality: Sheik appears rather distant at first, only speaking when necessary, oftentimes coming off as a bit of a jackass. He generally keeps to himself though he is perfectly willing to offer help to others, as he cares about the well- being of the people around him. If one gets to know him well enough, he will show a slightly softer side and he will prove to be an extremely loyal friend. However, it takes a lot of work on the other person's part to get to this point. People that are extremely persistent are more likely to get through to him. He doesn't seem capable of expressing his emotions very well, which is likely a result of being created and immediately put to work. He doesn't usually take a leading role, instead preferring to work "behind the scenes" so to speak. Sheik is generally passive, having little or no interest in anything beyond his duties. He rarely becomes angry, even though he is very easily irritated by people he considers "idiots".
Friendship is something of a foreign concept to him; he has never had the opportunity to make any friends because of his duties for both Princess Zelda and Ganondorf. He views people in terms of power, rather than viewing them as individual people. People that clearly have an advantage over him, like Ganondorf, he will obey without question. Any and all royalty will also be obeyed without question. People that he knows he can overpower easily are taken note of, and usually ignored. Every person he interacts with are analyzed and mentally classified. He perceives himself as little more than a tool for Princess Zelda. He knows of his purpose and his true identity, which has caused something of a complete withdrawal from others.
He enjoys playing music, and when he has a little bit of time, he will play his harp (though he refers to it as a lyre) for his own entertainment. His eating habits are a bit odd as he only really eats simple foods (bread, fruit and the like), and never in the company of others. He will only drink water and the occasional potion for injuries. He will refuse any offer of food and drink from others, an indicative of severe distrust.
Sheik has a strong dislike of people touching him, as a result, he also dislikes healers, preferring instead to take care of his own wounds. His reactions to being touched by others vary from simply moving away to striking the person initiating the contact. However, certain people, if he trusts them enough, are allowed minimal contact.
Should he encounter something completely unfamiliar, he will ask questions until he fully understands. This can sometimes take awhile, particularly if he is in an environment that is too far technologically advanced than he can really comprehend.
